Not often do you hear a recipe with the words "brownies" and "healthy" in it, but if you love brownies but you are looking for a healthier option, then you must try this Healthy Protein Brownies Recipe. Unlike traditional brownies, these healthier brownies contain no butter, white bleached flour, sugar or oil. Made with healthy and wholesome ingredients, these healthier brownies are PACKED with protein and contain healthy fats and are super low carbs. If you want to make home-made brownies in just a few minutes without feeling guilty try this:
INGREDIENTS:
3 eggs
1 teaspoon vanilla extract
3/4 cup (96 grams) whole wheat flour (we use nut flour to make gluten free)
3/4 cup Nutella (We use Justin’s Chocolate Hazelnut Spread- much healthier)
2 tbsp protein power (We use chocolate kids-MVP from purium)
DIRECTIONS:
Preheat oven to 375 degrees.
Crack the eggs into a large bowl.
Mix medium-high speed for about 5-7 minutes. The eggs should become light lemon-colored and puffy.
Beat in the vanilla extract.
Add the flour to eggs and vanilla with a rubber spatula, combine the ingredients mixing well, little by little.
Add 2 tbsp protein power combine the ingredients mixing well. Mixture will be thick.
In a large microwave-safe bowl, warm 3/4 cup of Nutella or Justin’s Chocolate Hazelnut Spread for about 40 seconds. You should get a loose and creamy consistency.
Combine the ingredients mixing well little by little.
Place the mixture in a 8x8-inch small baking dish (Lined with parchment paper leaving an overhang) and bake for about 15-20 minutes. Bake until a tester comes out with moist crumbs still attached. Do not overbake, you want to error on the side of underbaking.
Let the brownies cool down and then using a knife cut them in small squares. Serve at room temperature, warmed, or chilled. (I will say my kids normally beg for a piece right after they come out of the oven).
Store brownies in an airtight container at room temperature for up to a week.
