Beef n Broccoli Medley Bowl



Need a midweek healthy meal made in moments? Try this delicious medley recipe. Make it even quicker with leftover steak.


Beef and Broccoli Medley Bowl: 2 Servings


INGREDIENTS

  • 14 oz flank or boneless sirloin steak, cut into strips, raw weight (10 oz cooked)

  • 1/4 cup water

  • 1 tbsp McCormick lower sodium brown gravy mix

  • 2 tbsp lite soy sauce

  • 1/4 tsp garlic powder

  • 1/4 tsp freshly ground black pepper

  • 6.48 oz broccoli florets (cooked from frozen)

  • 2.63 oz green bell peppers, sliced

  • 2.63 oz red bell peppers, sliced

  • 6.34 oz cauliflower rice, cooked from frozen

DIRECTIONS

  1. Combine gravy mix, soy sauce, garlic powder, black pepper, and water in a small bowl. Set aside.

  2. Spray a large non-stick skillet with cooking spray and heat over medium-high heat. Add steak; cook and stir 3 to 4 minutes or until desired doneness. Do not over cook.

  3. Stir in broccoli, peppers, and gravy mixture. Bring to a boil. Reduce heat to low; cover and simmer 5 to 8 minutes or until broccoli is tender crisp. Serve each portion with 1/2 cup grated cauliflower
