Citrus-Grilled Pork Chops


This easy Citrus Grilled Pork Chops recipe is made with just a few ingredients for a delicious meal on the grill or baked in the oven. Great for busy weeknights or weekend cookouts. These pork chops have a quick and simple marinade and then they are quickly grilled and served up with grilled veggies to complete this healthy meal.


Citrus-Grilled Pork Chops: Serves 2


INGREDIENTS:

  • ¾ lb (12 oz) raw, boneless pork loin chops (should yield two 5-oz cooked servings)

  • 3 cups (1 small-medium bunch) raw broccoli, chopped (Or strips of pepper or zucchini, etc)

  • 10 sprays butter substitute spray (e.g., I Can’t Believe It’s Not Butter®)

Marinade:

  • 2 Tbsp fresh lime juice

  • 1 tsp olive oil

  • 2 cloves garlic, minced

  • 2 tsp or 1 packet sugar substitute (Sweetener of choice)

DIRECTIONS:

  • Mix together Marinade and for at least 6 hours (Overnight)

  • Heat gas grill to medium-high or prepare charcoal grill with medium-hot coals.

  • In a medium pot, heat water until boiling.

  • Add chopped broccoli and boil or steam until broccoli is al dente (tender-crisp) or put in tinfoil sprayed with cooking spray and grill.

  • Set cooked broccoli aside; cover to keep warm until serving.

  • Remove pork from marinade.

  • Grill pork chops about 12 minutes, turning halfway through, or until internal temperature registers 155° F on thermometer.

  • Divide broccoli and pork loin chops onto two plates.

  • Top each serving of broccoli with 5 sprays of butter spray (or a healthy dressing)
