If you’re looking for a pack-able, potluck-friendly salad, this is it. I love Broccoli Salad it is a favorite of mine. So I had to share for all those looking for a healthier version. It’s crisp, crunchy and fresh, which is exactly what you want broccoli salad to be. I’ve enjoyed a big bowl of this salad as a light meal by adding some additional protein.
Skinny Broccoli Salad: 2 Servings
3 cups broccoli florets
1/4 cup 2% Fage plain Greek yogurt
3 tbsp reduced fat mayo
2 packets sweetener of choice (Stevia or Truvia)
1 tbsp apple cider vinegar
1/4 tsp salt (optional)
2 tbsp low sodium real bacon bits
1 oz sliced almonds
1/3 cup reduced fat shredded cheddar cheese
Place washed broccoli florets in a medium sized bowl, set aside.
In a small bowl, combine yogurt, mayo, sweetener, vinegar and salt.
Stir until smooth.
Pour yogurt mixture over broccoli and stir until all combined.
Add sliced almonds, bacon and cheese.
Toss gently until all pieces are evenly coated.
Pro-Tip: Let is sit and marinade if you have time, it gains flavor as it sits.
You still need to add protein to complete this balanced meal.
Some examples are:
4.5 oz chicken/turkey breasts
5.2 oz of shrimp or tilapia
