This recipe is creamy and comforting, loaded with ranch, chicken, bacon, and all baked to cheesy ooey gooey perfection. This recipe is a family favorite that will have you hooked and a great dish to pass, where everyone will be asking you for the recipe. Plus it can be made ahead of time and by using zoodles and rotisserie chicken you can whip up this recipe in no time. You can also do this in the Instant Pot to make it even quicker. Bacon Ranch Bake: Makes 2 Servings
INGREDIENTS:
3c cooked zucchini “noodles” or Spaghetti Squash
2 Tbsp reduced-fat Ranch dressing
1 oz. lean turkey bacon/bacon pieces, cooked and chopped up
1/2c Reduced Fat Mexican Cheese blend or Cheddar Cheese (divided)
7 oz Rotisserie Chicken Breast, shredded or chopped
1/2 tsp garlic powder
1 cup unsweetened almond or cashew milk (Optional - to make it creamier!)
1/4 tsp salt (Optional)
(1) 4 oz can green chilies (Optional)
1/2 tsp of Parsley, chopped (Optional - to sprinkle on top)
DIRECTIONS:
Bake Spaghetti Squash at 350 until soft.
Scrape all Squash out into a bowl.
Mix with ranch dressing, garlic powder, salt, 1/4c cheddar cheese, bacon pieces and chicken.
Place in a casserole dish, top with remaining cheese and broil until the cheese browns!
