Peppered Puttanesca: Serves 4
Succulent chicken breast takes on a whole new life with this easy recipe that’s both healthy and low carb friendly. The tang of tomatoes and capers along with sweet bell peppers cook up to make a mouth-wateringly delicious meal perfect for family meals and more.
4 tsp Olive Oil
1½ lb boneless, skinless chicken breasts,
1 Cup diced tomatoes
1 tsp Mrs Dash Italian Seasoning
1/2 Tbsp Mrs Dash Garlic & herb Seasoning
1/2 Tbsp Mrs Dash Onion & herb Seasoning
2 Cups multi colored bell pepper, sliced
2 Tbsp capers, drained
In a large frying pan, heat oil until sizzling.
Add chicken and sauté for 2 minutes, until chicken is opaque.
Reduce heat to medium.
Add remaining ingredients to the pan.
Cover the pan and cook for 5-7 minutes until peppers are soft and chicken is thoroughly cooked.
