Healthy Sliders

As spring begins, many begin to grill again. So I thought I would share this idea: What a great idea to be a part of the party and still eat healthy... small tweak right here 👇👇👇👇 to make yummy classics, healthy.

Mini Zucchini Slider Trio!!! INGREDIENTS:

  • 12oz zucchini sliced into 1/2 inch rounds

  • 6.5oz 90% lean ground beef divided into 3 portions

  • 2 Kerrygold cheddar cheese wedges divided into 3 portions (optional)

  • Salt (optional)

  • Pepper (optional)

  • Cooking spray (optional)

  • Mustard (optional)

DIRECTIONS:

  • Preheat oven to 425 (Can easily be done on the grill)

  • Season zucchini with salt/pepper and spray with cooking oil spray

  • Bake for 5 mins

  • Turn oven to broil, place pan near the top and broil 3-5 minutes or until zucchini is tender crisp.

  • For each slider take portion of beef and divide - add cheese (If desired) to middle and seal beef around. Do this for remaining 2 burgers.

  • Cook in skillet for 6 minutes over medium high heat and flipping after 3 minutes.

  • To plate: Zucchini slice on bottom, burger, dollop of mustard, and top with zucchini. Any remaining zucchini plate as a side dish.
