This easy peasy and Crockpot Thai Chicken Recipe is healthy, tasty, & only takes one dish and five minutes to put together! 6 hours of cook time and you’ve got one yummy great weeknight meal for the whole family! After a few hours, your house will smell ridiculously good and you’ll get to enjoy this healthy crockpot Thai chicken and say so long unhealthy take-out!
Thai Crock Pot Chicken: Serves 4 INGREDIENTS:
32 oz chicken breasts, raw - yields 24 oz cooked
3/4 cup or 12 tbsp (6 oz) Salsa Verde
2 tbsp PB2
1 tbsp + 2 tsp low sodium soy sauce
1/4 tsp ginger
6 cups cauliflower cooked and grated
Place all ingredients in the crock pot, except cauliflower rice.
Stir to roughly mix the ingredients and make sure that the chicken is completely coated with the marinade.
Cook on low for 6 hours, no stirring.
To serve, divide chicken into 4 equal portions of 6 oz each over 1 1/2 cups of cauliflower rice per serving.
Stir sauce in crock pot and then spoon the sauce evenly over each portion.
