Mushroom Swiss Burger Stuffed Zucchini Boats

INGREDIENTS:

  • * 4 med/small zucchini washed

  • * non-stick spray

  • * 3 cloves of garlic diced

  • * 1 lbs lean ground beef (90%)

  • * 1 tsp salt

  • * Ā½ tsp dried oregano

  • * Ā¼ tsp pepper

  • * 8 oz mushrooms thinly sliced

  • * 3 triangles of LIGHT creamy Swiss laughing cow cheese

  • * Ā¼ cup diced onion (optional) I left this out

DIRECTIONS:

  • Preheat oven to 375 F

  • Cut zucchini length wise, scoop out, leaving about 1/4ā€ sides and bottom. Set boats aside then chop scooped out filling

  • Heat skillet, over medium to medium high heat, spray non-stick cooking spray, if you choose to add onions do so at this time, by adding Ā½ of the diced onions with the diced garlic. Saute until onion is slightly caramelized ( about 3-5 minutes depending on the heat setting) then add chopped zucchini filling. Continue cooking until filling has softened and water has cooked off, (approx. 3-4 mins)

  • Add ground beef, salt oregano, and black pepper, stirring often until ground beef is cooked.

  • Lay zucchini boats on a baking sheet spaced evenly, spoon ground beef mixture in to boats, then place in oven. Bake for 15 minutes or until zucchini is tender, but still holding itā€™s shape

  • While boats are baking, heat pan over med to med high heat and spray with non stick cooking spray add mushrooms and rest of onions if using. Saute until soft. set aside

  • Melt the laughing cow cheese in microwave safe bowl (medium-low heat) in 10- 15 second increments stirring in between incrementsā€¦be careful as to not burn cheese!!

  • After boats are done remove from oven add mushrooms and, spoon melted cheese over each boat.
